Ingredients
1/2 cup unsalted butter, softened
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1/2 cup dried cherries, roughly chopped
1/2 cup dark chocolate chips
1/2 cup mocha chips (or espresso chocolate chips)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, and beat until well combined.
- In a separate bowl, whisk together the flour, baking soda, and sea salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the chopped dried cherries, dark chocolate chips, and mocha chips until evenly distributed.
- Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing about 2 inches apart.
- Bake for 9–11 minutes, or until the edges are golden and the centers are still soft.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
