Ingredients
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1/4 cup vegetable oil
2 large eggs
1 tsp vanilla extract
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup powdered sugar (for rolling)
Instructions
- In a large mixing bowl, whisk together the cocoa powder, granulated sugar, and oil until well combined.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a thick dough forms.
- Cover the bowl and chill the dough in the refrigerator for at least 3 hours or overnight.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop tablespoon-sized portions of dough, roll into balls, and coat generously in powdered sugar.
- Place the cookie balls on the baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes, until they’ve spread and developed a crinkled appearance.
- Let the cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
