Ingredients
2 1/2 cups shredded coconut, unsweetened

1/4 cup coconut oil, melted
1/4 teaspoon vanilla extract
1/4 teaspoon salt
2 tablespoons almond flour (optional for added texture)
Instructions
-
Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
-
In a large mixing bowl, combine the shredded coconut, honey or maple syrup, melted coconut oil, vanilla extract, and salt. Stir until fully mixed.
-
If using almond flour, add it and mix until incorporated.
-
Pour the coconut mixture into the pan and press down firmly to form an even layer.
-
Bake for 15-20 minutes, until the edges are golden brown and the top is lightly browned.
-
Allow the bars to cool completely before cutting into squares or bars.
Notes
Add-ins: Consider mixing in chocolate chips, dried fruit, or nuts for more variety.
Sweetener Swap: Agave nectar or stevia can replace honey or maple syrup.
Vegan Option: Use maple syrup and a vegan-friendly almond flour.
Coconut Flour: If using coconut flour instead of almond flour, reduce the amount since coconut flour absorbs more liquid.
Freezing: These bars freeze well for up to 2 months.
