Ingredients

1 ½ cups shredded unsweetened coconut

1 cup all-purpose flour

½ teaspoon baking powder

¼ teaspoon baking soda

¼ teaspoon salt

½ cup coconut oil (or melted butter)

¾ cup brown sugar

1 large egg

1 teaspoon vanilla extract

2 tablespoons milk


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, mix coconut oil (or melted butter) with brown sugar until creamy and well combined.
  4. Add the egg, vanilla extract, and milk, and continue mixing until smooth.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Stir in shredded coconut until evenly distributed in the dough.
  7. Drop spoonfuls of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
  8. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a richer flavor, you can use melted butter instead of coconut oil.
