Description

Tender chicken paired with sautéed peppers and onions, tossed in a creamy white sauce with perfectly cooked penne pasta. This comforting one-pan dish is rich, flavorful, and perfect for an easy family dinner.


Ingredients

4 chicken parts (drumsticks or thighs) or 2 boneless chicken breasts, cut into pieces

1 green pepper, seeds removed and sliced

1 red pepper, seeds removed and sliced

1 medium onion, sliced

1 heaping tablespoon minced garlic (jarred)

3/4 cup chicken broth

1/2 cup mayonnaise

1/2 box penne pasta

Salt and pepper to taste

1 tablespoon olive oil

1 tablespoon butter


Instructions

  1. Season the chicken with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium heat. For boneless chicken, sauté until golden brown and fully cooked. For bone-in chicken, brown on all sides, then transfer to a preheated 375°F oven and bake for about 30 minutes until cooked through.
  3. Using the same skillet with the drippings, add the sliced green pepper, red pepper, onion, and garlic. Sauté until softened, then remove and set aside. Drain excess grease and carefully wipe the skillet clean.
  4. Cook the penne pasta according to package instructions. Drain and set aside.
  5. Return the cooked chicken to the skillet. Add the sautéed vegetables and cooked pasta.
  6. Whisk together the chicken broth and mayonnaise until smooth, then pour into the skillet.
  7. Cook over medium heat for a few minutes, stirring gently, until the sauce thickens and evenly coats the chicken and pasta. Serve warm.

Notes

Add zucchini or mushrooms for extra vegetables and flavor.

Swap penne with fusilli or farfalle to vary the texture.

For a lighter option, substitute mayonnaise with Greek yogurt or sour cream.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat gently on the stovetop over low heat with a splash of chicken broth to maintain creaminess. Freezing is not recommended as the sauce may separate.
