Description

A Chicken Broccoli Bake is a comforting and easy casserole featuring tender chicken, fresh broccoli, and a creamy, cheesy sauce. Topped with a crispy Ritz cracker crust, this dish is perfect for busy weeknights, potlucks, or family gatherings.

Ingredients

3 boneless, skinless chicken breasts, cooked and chopped into bite-sized pieces

4 cups fresh broccoli florets

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1 can cream of chicken soup

1/2 cup sour cream

1/2 cup milk

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1 cup crushed Ritz crackers (for topping)

Instructions

  1. Preheat & Prep: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Steam Broccoli: Cook broccoli florets until bright green and tender-crisp.
  3. Make Sauce: In a bowl, mix cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper until smooth.
  4. Combine Ingredients: Stir in the cooked chicken and steamed broccoli.
  5. Assemble: Pour the mixture into the baking dish and spread evenly.
  6. Add Toppings: Sprinkle cheddar and Parmesan cheese, then top with crushed Ritz crackers.
  7. Bake: Bake for 30-35 minutes, until golden brown and bubbly.
  8. Rest & Serve: Let it sit for a few minutes before serving.

Notes

Make it Heartier: Add cooked rice before baking.

Cheese Variations: Try mozzarella, Swiss, or Gouda for a different taste.

Spicy Twist: Add red pepper flakes or cayenne for some heat.

Low-Carb Option: Use crushed pork rinds instead of crackers.

Vegetarian Alternative: Swap chicken for chickpeas or extra broccoli.
