Description

This chicken broccoli rice casserole is a creamy, cheesy, and flavorful one-pan meal that’s perfect for busy weeknights. Loaded with tender chicken, nutritious broccoli, and fluffy rice, it’s a family-friendly comfort food that’s easy to prepare, versatile, and ideal for meal prepping.

Ingredients

2 cups cooked rice (white or brown)

2 cups cooked chicken, shredded or diced

2 cups fresh or frozen broccoli florets

1 cup shredded cheddar cheese (plus extra for topping)

1 can (10.5 oz) condensed cream of chicken soup (or homemade substitute)

1/2 cup milk

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Optional: 1/2 cup breadcrumbs mixed with 2 tablespoons melted butter for a crispy topping

Instructions

  1. Preheat the Oven: Preheat oven to 180°C (350°F) and grease a 9×13-inch baking dish.
  2. Cook the Broccoli: Steam or blanch fresh broccoli for 2-3 minutes until tender, then drain.
  3. Mix Ingredients: In a large bowl, mix cooked rice, chicken, broccoli, cheddar cheese, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
  4. Assemble: Spread the mixture evenly in the prepared baking dish.
  5. Add Toppings: Sprinkle extra cheddar cheese and, optionally, buttered breadcrumbs over the top.
  6. Bake: Bake uncovered for 25-30 minutes, or until bubbling and golden.
  7. Serve: Let cool slightly before serving.

Notes

Variations: Add carrots, peas, or bell peppers for extra veggies. Swap chicken for turkey or tuna.

Storage: Refrigerate for up to 4 days or freeze for up to 3 months. Reheat in the oven or microwave.

Healthier Option: Use low-fat cheese and low-sodium soup.
