Description

Juicy and flavorful chicken skewers marinated with aromatic spices, baked to perfection in the oven. A healthy, easy-to-make meal ideal for weeknight dinners or casual gatherings.


Ingredients

1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

2 tablespoons olive oil

2 tablespoons lemon juice

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

1/2 teaspoon chili powder (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large bell pepper, cut into chunks

1 red onion, cut into chunks

Wooden skewers, soaked in water for 30 minutes


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or grease it lightly.
  2. In a mixing bowl, combine olive oil, lemon juice, garlic, smoked paprika, cumin, oregano, chili powder (if using), salt, and black pepper to prepare the marinade.
  3. Toss chicken pieces in the marinade until well coated. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  4. Alternate threading marinated chicken, bell pepper, and onion onto soaked wooden skewers.
  5. Place the skewers on the prepared baking sheet, leaving space between each for even cooking.
  6. Bake for 20–25 minutes, turning halfway, until the chicken is cooked through and slightly browned at the edges. Ensure an internal temperature of 165°F (74°C).
  7. Let the skewers rest for a few minutes before serving. Enjoy with your favorite sides or dips.

Notes

For extra flavor, marinate chicken overnight.

Soaking wooden skewers prevents burning during baking.

Experiment with additional veggies like zucchini, mushrooms, or cherry tomatoes for variety.
