Ingredients

1 lb ground chicken

1 cup grated zucchini, squeezed of excess moisture

1/4 cup almond flour (or breadcrumbs)

1/4 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1/2 tsp paprika

1/2 tsp dried oregano

Salt and pepper, to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, grated zucchini, almond flour (or breadcrumbs), Parmesan cheese, egg, minced garlic, paprika, dried oregano, salt, and pepper. Mix until well combined.
  3. Shape the mixture into small, bite-sized patties (poppers) and place them on a baking sheet lined with parchment paper.
  4. Bake for 18-20 minutes, or until cooked through and lightly browned.
