Ingredients
For the Shrimp:
1 lb large shrimp, peeled and deveined
1 tablespoon olive oil
2 chipotle peppers in adobo sauce, minced
1 tablespoon adobo sauce
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon garlic powder
Salt and pepper to taste
For the Bowl:
2 cups cooked white or brown rice
1 cup black beans, rinsed and drained
1 cup corn kernels (fresh, canned, or frozen)
1 cup cherry tomatoes, halved
1 avocado, sliced
1/4 cup red onion, thinly sliced
1/4 cup fresh cilantro, chopped
Lime wedges, for serving
For the Lime Crema:
1/2 cup plain Greek yogurt or sour cream
Juice of 1 lime
1 clove garlic, minced

In a bowl, toss the shrimp with olive oil, chipotle peppers, adobo sauce, smoked paprika, cumin, garlic powder, salt, and pepper. Let the shrimp marinate for 10 minutes.
