For the Cake:
1 box chocolate cake mix
1 cup Dr Pepper
1/3 cup vegetable oil
3 large eggs
1 cup maraschino cherries, chopped, plus more for garnish
For the Frosting:
1/2 cup unsalted butter, softened
4 cups powdered sugar
2–3 tablespoons Dr Pepper
1 teaspoon vanilla extract
Cherry and chocolate shavings, for garnish
Instructions
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
- In a large mixing bowl, combine the chocolate cake mix, Dr Pepper, vegetable oil, and eggs. Beat until smooth.
- Gently fold in the chopped maraschino cherries.
- Divide the batter evenly between the prepared pans and bake for 28-32 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
- For the frosting, beat softened butter until creamy, then gradually add powdered sugar, Dr Pepper, and vanilla extract until smooth.
- Place one cooled cake layer on a serving plate, spread frosting on top, add the second layer, and frost the top and sides. Garnish with cherry and chocolate shavings.
Notes
For best results, ensure all ingredients are at room temperature before starting.
