Ingredients

8 oz (227g) semi-sweet or bittersweet chocolate, finely chopped

1 cup (240ml) heavy cream

1 tbsp unsalted butter, room temperature (optional, for extra shine)


Instructions

  1. Place the finely chopped chocolate in a heatproof bowl.
  2. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil.
  3. Pour the hot cream over the chopped chocolate and let it sit for 2-3 minutes to soften the chocolate.
  4. Gently whisk the mixture starting from the center, slowly working your way outward, until the chocolate is completely melted and the mixture is smooth and glossy.
