Ingredients

1/2 cup unsalted butter

1 cup semi-sweet chocolate chips

3/4 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/2 teaspoon baking powder

1/4 teaspoon salt

Extra chocolate chips or chocolate chunks for the lava center

Instructions

  1. Melt Chocolate and Butter: In a microwave-safe bowl, melt the butter and 1 cup of chocolate chips together in 30-second intervals until smooth. Set aside to cool slightly.
  2. Mix Sugars and Eggs: In a large bowl, beat together granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
  3. Combine Wet and Dry Ingredients: Stir the melted chocolate mixture into the sugar mixture until well combined.
  4. Add Dry Ingredients: In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Chill Dough: Cover the dough and refrigerate for 30 minutes to firm up.
  6. Shape and Fill Cookies: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop tablespoon-sized portions of dough, flatten slightly, place a few chocolate chips or a small chocolate chunk in the center, then fold the dough around to seal.
  7. Bake: Arrange the cookies on the prepared baking sheet, spacing them 2 inches apart. Bake for 9-11 minutes, until edges are set but centers remain soft.
  8. Cool and Serve: Allow cookies to cool for a few minutes before transferring to a wire rack. Enjoy warm for a gooey center.

Notes

For a variety, try using different types of chocolate for the lava center.

Don’t overbake the cookies; they should be soft in the center for the best molten effect.
