Description

Ingredients

1 ½ cups creamy peanut butter

½ cup unsalted butter, softened

1 teaspoon vanilla extract

3 ½ cups powdered sugar

2 cups semisweet chocolate chips

2 tablespoons shortening (or coconut oil)


Instructions

  1. In a large mixing bowl, beat together the peanut butter, softened butter, and vanilla extract until smooth and creamy.
  2. Gradually add the powdered sugar, mixing until a thick dough forms. Use hands if needed to combine fully.
  3. Roll the dough into 1-inch balls and place on a parchment-lined baking sheet.
  4. Chill the balls in the refrigerator for at least 30 minutes or until firm.
  5. In a microwave-safe bowl, melt the chocolate chips and shortening in 30-second intervals, stirring between each until smooth.
  6. Dip each chilled ball into the melted chocolate using a fork or toothpick, ensuring it’s fully coated.
  7. Place coated balls back on the parchment paper and chill until the chocolate is set.
  8. Store in an airtight container in the refrigerator.
