Ingredients
1 ½ cups creamy peanut butter
½ cup unsalted butter, softened
1 teaspoon vanilla extract
3 ½ cups powdered sugar
2 cups semisweet chocolate chips
2 tablespoons shortening (or coconut oil)
Instructions
- In a large mixing bowl, beat together the peanut butter, softened butter, and vanilla extract until smooth and creamy.
- Gradually add the powdered sugar, mixing until a thick dough forms. Use hands if needed to combine fully.
- Roll the dough into 1-inch balls and place on a parchment-lined baking sheet.
- Chill the balls in the refrigerator for at least 30 minutes or until firm.
- In a microwave-safe bowl, melt the chocolate chips and shortening in 30-second intervals, stirring between each until smooth.
- Dip each chilled ball into the melted chocolate using a fork or toothpick, ensuring it’s fully coated.
- Place coated balls back on the parchment paper and chill until the chocolate is set.
- Store in an airtight container in the refrigerator.
