1/4 cup unsalted butter, softened
1 1/2 cups powdered sugar

1 tablespoon coconut oil or shortening (optional, for smoother chocolate coating)
Instructions
- In a medium mixing bowl, combine the peanut butter, softened butter, powdered sugar, and vanilla extract. Stir until smooth and well-combined.
- Roll the peanut butter mixture into small, bite-sized balls and place them on a parchment-lined baking sheet. Chill in the freezer for 15-20 minutes, or until firm.
- While the candies chill, melt the chocolate chips with the coconut oil in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth.
- Dip each peanut butter ball into the melted chocolate, using a fork to lift and gently tap off any excess chocolate. Place the coated candies back on the parchment-lined baking sheet.
- Once all candies are coated, refrigerate for 15-20 minutes to set the chocolate.
Notes
You can use natural peanut butter, but adjust the powdered sugar to achieve the desired consistency.
For a healthier option, substitute dark chocolate and reduce the sugar.
Add crushed graham crackers or mini chocolate chips to the filling for extra flavor.
