Ingredients
1 pie crust (store-bought or homemade)
1 cup corn syrup (light or dark)
3/4 cup granulated sugar
1/2 cup brown sugar, packed
1/4 cup unsalted butter, melted
3 large eggs
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
1 1/2 cups pecan halves
1/2 cup semi-sweet or bittersweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a pie dish with pie crust, trimming and crimping edges.
- In a large bowl, whisk together corn syrup, granulated sugar, brown sugar, melted butter, eggs, vanilla extract, and salt until smooth.
- Stir in pecan halves and chocolate chips.
- Pour the mixture into the prepared pie crust, spreading pecans evenly.
- Bake for 50-60 minutes or until the filling is set and slightly puffed. Cover crust edges with foil if they brown too quickly.
- Let the pie cool completely before slicing. Serve as is, or with whipped cream or vanilla ice cream.
Notes
For a crispier crust, blind bake the pie crust for 10 minutes before adding the filling.
Store leftovers at room temperature for up to 3 days or in the fridge for up to 5 days.
The pie can be frozen for up to 2 months; thaw in the fridge overnight before serving.
