Ingredients

1.5 lbs (700g) salmon fillet, skin-on

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Zest of 1 lemon

Juice of 1 lemon

1 orange, thinly sliced

Salt and pepper to taste

Fresh parsley, for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the salmon fillet on a large piece of parchment paper or foil on a baking sheet.
  3. Drizzle the salmon with olive oil, then rub the minced garlic, rosemary, thyme, lemon zest, and lemon juice over the fillet. Season with salt and pepper.
  4. Arrange orange slices on top of the salmon.
  5. Fold the parchment or foil over the salmon to create a sealed packet.
  6. Bake for 20-25 minutes, or until the salmon flakes easily with a fork.
  7. Remove from the oven, open the packet, and garnish with fresh parsley. Serve warm.

Notes

You can prepare this dish ahead of time. Simply refrigerate the baked salmon once cooled and reheat gently before serving.

Leftover salmon can be flaked and added to salads or pasta dishes.
