Instructions

  1. Make the Cheesecake Filling: In a small bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth. Chill in the freezer for about 20 minutes.
  2. Make the Cookie Dough: In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract. In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt. Gradually add the dry ingredients to the wet mixture until combined.
  3. Assemble the Cookies: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Take about 1 tablespoon of dough, flatten it slightly, and place a small ball of cheesecake filling in the center. Wrap the dough around the filling and roll it into a ball.
