Ingredients

For the Cupcakes:

1 ½ cups all-purpose flour

1 ½ teaspoons ground cinnamon

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup milk

For the Cinnamon Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

2 teaspoons ground cinnamon

3 ½ cups powdered sugar

1 teaspoon vanilla extract

Optional Topping:

Cinnamon sugar (for sprinkling)

Mini churros (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a medium bowl, whisk together flour, ground cinnamon, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  5. Divide the batter among cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Let cool completely.
  6. For the frosting, beat cream cheese and butter until smooth. Add cinnamon, powdered sugar, and vanilla; beat until fluffy.
  7. Frost the cooled cupcakes generously and optionally sprinkle with cinnamon sugar and garnish with mini churros.
