Ingredients

68 chicken thighs (boneless or bone-in, skin-on or skinless)

3 tablespoons olive oil

Juice of 2 limes

Zest of 1 lime

3 cloves garlic, minced

½ cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon paprika

½ teaspoon black pepper

Optional: pinch of chili flakes for heat


Instructions

  1. In a bowl, whisk together olive oil, lime juice, lime zest, garlic, cilantro, cumin, paprika, black pepper, and chili flakes (if using).

  2. Add chicken thighs to the bowl, coating thoroughly with the marinade.

  3. Cover and marinate for at least 30 minutes, or refrigerate overnight for deeper flavor.

  4. Preheat a grill or skillet over medium-high heat.

  5. Cook chicken for 5–7 minutes per side, or until golden and cooked through (internal temp: 165°F / 74°C).

  6. Garnish with additional cilantro and lime wedges. Serve hot.

Notes

Baked version: Bake at 425°F (218°C) for 25–30 minutes.

Chicken breast option: Substitute chicken thighs with breasts; reduce cooking time slightly.

Citrus variation: Try lemon or orange for a different citrus profile.

Extra heat: Add chopped jalapeños or increase chili flakes.
