Description

A warm and comforting cinnamon apple oatmeal bowl made with tender oats, soft sautéed apples, and creamy almond butter for a nourishing plant-based breakfast.


Ingredients

1 tsp olive oil

1 small apple, diced

1/4 tsp cinnamon

1 tsp vanilla extract

1/2 cup rolled oats

1 cup almond milk

1 tbsp almond butter

1 tbsp maple syrup


Instructions

  1. Heat olive oil in a small pot over medium heat.
  2. Add diced apple, cinnamon, and vanilla extract, and sauté for about 3 minutes until apples begin to soften.
  3. Remove a few apple pieces and set aside for topping.
  4. Add rolled oats and almond milk to the pot and bring to a boil.
  5. Reduce heat and let simmer for 10–15 minutes, stirring occasionally, until oats are tender and liquid is mostly absorbed.
  6. Transfer oatmeal to a bowl and top with reserved apples, almond butter, and maple syrup. Serve warm.

Notes

Swap almond milk with oat, soy, coconut, or dairy milk if preferred.

Use peanut butter instead of almond butter for a different flavor.

Add chopped nuts, chia seeds, or flaxseed for extra texture and nutrition.

Enhance flavor with a pinch of nutmeg or cardamom.

Store leftovers in the refrigerator for up to 3 days and reheat with a splash of almond milk.
