Ingredients

1 and 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

3 ripe bananas, mashed (about 1 and 1/2 cups)

1/2 cup granulated sugar

1/4 cup packed brown sugar

1/3 cup vegetable oil or melted butter

1 large egg, beaten

1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or grease with non-stick cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
  3. In a large bowl, mash the ripe bananas until smooth. Add the granulated sugar, brown sugar, vegetable oil or melted butter, beaten egg, and vanilla extract. Mix well until combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix; a few lumps are okay.
  5. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  6. In a small bowl, mix together the granulated sugar and ground cinnamon for the topping. Sprinkle a generous pinch of the cinnamon sugar topping over each muffin batter-filled cup.
