Ingredients
For the Cookies:
2 1/2 cups (310g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 cup (170g) unsalted butter, softened
1 cup (200g) granulated sugar
1/2 cup (120ml) eggnog
1 large egg
1 teaspoon vanilla extract
For the Frosting:
2 cups (250g) powdered sugar
3 tablespoons eggnog
1/4 teaspoon ground cinnamon
1/4 teaspoon vanilla extract
Optional: Holiday sprinkles for decoration
Instructions
- Preheat and Prep
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper. - Mix Dry Ingredients
In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. - Cream Butter and Sugar
Using a mixer, cream the butter and sugar in a large bowl until light and fluffy (about 2-3 minutes). - Add Wet Ingredients
Beat in the eggnog, egg, and vanilla extract until combined. - Combine Wet and Dry
Gradually add the dry ingredients to the wet mixture, mixing gently until just combined. Avoid overmixing. - Scoop and Bake
Drop tablespoons of dough onto the baking sheets, spacing them 2 inches apart. Bake for 10-12 minutes, or until edges are lightly golden. Cool on the sheet for 5 minutes, then transfer to a wire rack. - Prepare Frosting
Whisk powdered sugar, eggnog, cinnamon, and vanilla extract until smooth. Adjust eggnog for desired consistency. - Frost and Decorate
Spread or drizzle frosting on cooled cookies. Add sprinkles or a dusting of cinnamon for decoration.
Notes
