Ingredients
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup unsalted butter, chilled and cut into small pieces
4–5 tablespoons ice water
1 cup granulated sugar
1/4 cup brown sugar, packed
1/4 cup all-purpose flour
1 tablespoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup heavy cream
1/2 cup whole milk
4 large eggs
1 teaspoon vanilla extract
2 tablespoons unsalted butter, melted
Whipped cream (optional, for topping)
Ground cinnamon (for dusting)
Instructions
- Prepare the Crust:
- In a medium bowl, combine flour and salt. Cut in chilled butter until mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until dough forms.
- Form dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
- Preheat oven to 375°F (190°C). Roll out chilled dough on floured surface and fit into 9-inch pie dish. Trim and crimp edges.
- Prepare the Filling:
- In a large bowl, whisk granulated sugar, brown sugar, flour, cinnamon, nutmeg, and salt.
- Add heavy cream, milk, eggs, and vanilla extract; whisk until smooth.
- Stir in melted butter. Pour filling into prepared pie crust.
- Bake the Pie:
- Bake for 45-50 minutes, until filling is set and crust is golden brown. If crust browns too quickly, cover edges with aluminum foil.
- Cool pie completely on wire rack.
- Serve:
- Top with whipped cream and dust with ground cinnamon before serving.
Notes
Ensure pie is fully cooled before slicing to set filling properly.
