Ingredients
For the Crust:
1 ½ cups graham cracker crumbs
1/3 cup melted butter
2 tablespoons sugar
For the Cheesecake Filling:
24 oz (3 packages) cream cheese, softened
1 cup granulated sugar
3 large eggs
1 cup sour cream
1 teaspoon vanilla extract
For the Cinnamon Swirl:
½ cup brown sugar
1 tablespoon ground cinnamon
¼ cup melted butter
For the Icing:
1 cup powdered sugar
2–3 tablespoons milk
½ teaspoon vanilla extract
Instructions
- Prepare the Crust: Preheat the oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of a greased 9-inch springform pan. Bake for 10 minutes, then cool.
- Make the Cheesecake Filling: Beat softened cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream and vanilla extract.
- Create the Cinnamon Swirl: In a small bowl, combine brown sugar, cinnamon, and melted butter to form a smooth mixture.
- Assemble the Cheesecake: Pour half the cheesecake batter over the crust. Drizzle half of the cinnamon swirl mixture on top and swirl with a knife. Repeat with the remaining batter and cinnamon mixture.
- Bake: Bake for 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven, crack the door, and cool for 1 hour. Refrigerate for at least 4 hours or overnight.
- Make the Icing: Whisk powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cheesecake before serving.
- Serve: Slice and enjoy this rich, cinnamon-swirled delight!
