Description
Classic Beef Stroganoff is a rich and comforting dish made with tender strips of sirloin simmered in a creamy mushroom sauce and served over warm egg noodles for a hearty, satisfying meal.
Ingredients
1 lb (450g) sirloin steak, thinly sliced into strips
1 tablespoon olive oil
1 tablespoon butter
1 onion, finely chopped
2 garlic cloves, minced
10 oz (300g) cremini or white mushrooms, sliced
1 tablespoon all-purpose flour
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1/2 cup sour cream
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Cooked egg noodles, for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches until browned but not fully cooked through. Remove and set aside.
- In the same skillet, melt the butter and sauté the chopped onion for about 5 minutes until soft and translucent. Add the garlic and cook until fragrant.
- Add the sliced mushrooms and cook until browned and their moisture has evaporated.
- Sprinkle the flour over the mushrooms and stir for about 1 minute to remove the raw flour taste.
- Gradually pour in the beef broth while stirring. Add Worcestershire sauce and Dijon mustard, then simmer until the sauce thickens slightly.
- Lower the heat and gently stir in the sour cream without bringing the sauce to a boil.
- Return the beef and its juices to the skillet and simmer gently for a few minutes until the beef is tender and heated through.
- Season with salt and pepper to taste. Serve hot over cooked egg noodles and garnish with fresh parsley.
Notes
For extra tenderness, use beef tenderloin instead of sirloin.
Greek yogurt can be substituted for sour cream for a lighter option.
Add a splash of white wine before the broth for extra depth of flavor.
For a gluten-free version, replace flour with cornstarch and serve over rice.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat gently over low heat to prevent the sauce from curdling.
