Ingredients

4 ripe tomatoes, diced

3 cloves garlic, minced

1/4 cup fresh basil, chopped

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

1 baguette, sliced

2 tablespoons olive oil (for brushing the bread)

Optional: Grated Parmesan cheese for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, combine diced tomatoes, minced garlic, chopped basil, extra virgin olive oil, balsamic vinegar, salt, and pepper. Stir well and let sit for 10-15 minutes.
  3. Arrange baguette slices on a baking sheet and brush with olive oil.
  4. Bake the bread for 8-10 minutes, or until golden and crisp.
  5. Top each toasted slice with a spoonful of the tomato mixture.
  6. Optionally, sprinkle with grated Parmesan cheese before serving. Serve immediately while warm.

Notes

To prevent the bread from becoming soggy, assemble the bruschetta just before serving.

You can prepare the tomato mixture ahead of time and store it in the fridge, but bring it to room temperature before serving.
