Ingredients
4 ripe tomatoes, diced
3 cloves garlic, minced
1/4 cup fresh basil, chopped
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
Salt and pepper to taste
1 baguette, sliced
2 tablespoons olive oil (for brushing the bread)
Optional: Grated Parmesan cheese for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a medium bowl, combine diced tomatoes, minced garlic, chopped basil, extra virgin olive oil, balsamic vinegar, salt, and pepper. Stir well and let sit for 10-15 minutes.
- Arrange baguette slices on a baking sheet and brush with olive oil.
- Bake the bread for 8-10 minutes, or until golden and crisp.
- Top each toasted slice with a spoonful of the tomato mixture.
- Optionally, sprinkle with grated Parmesan cheese before serving. Serve immediately while warm.
Notes
To prevent the bread from becoming soggy, assemble the bruschetta just before serving.
