Ingredients

For the Meatloaf:

2 pounds ground beef (80% lean)

1 cup breadcrumbs (plain or seasoned)

1/2 cup milk

1 small onion, finely chopped

2 cloves garlic, minced

2 large eggs

2 tablespoons Worcestershire sauce

1/4 cup ketchup

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

For the Glaze:

1/4 cup ketchup

2 tablespoons brown sugar

1 tablespoon Dijon mustard


Instructions

  1. Preheat your oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
  2. In a large mixing bowl, combine breadcrumbs and milk. Let it sit for 2 minutes to absorb.
  3. Add ground beef, onion, garlic, eggs, Worcestershire sauce, ketchup, thyme, salt, and pepper. Gently mix until combined, avoiding overmixing.
  4. Shape the mixture into a loaf and place it in the prepared pan. Smooth the top.
  5. In a small bowl, mix ketchup, brown sugar, and Dijon mustard for the glaze. Spread half the glaze over the meatloaf.
  6. Bake for 45 minutes. Remove, spread the remaining glaze, and bake for 15 more minutes, or until the internal temperature reaches 160°F (71°C).
  7. Rest for 10 minutes before slicing and serving.

Storage: Refrigerate leftovers for up to 4 days or freeze slices for up to 3 months.
