Ingredients
Crust:
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
Filling:
4 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
4 large eggs
1 cup sour cream
1/4 cup all-purpose flour
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan and wrap the outside with aluminum foil to prevent water from leaking in during baking.
- In a medium bowl, mix the graham cracker crumbs with melted butter until well combined. Press the mixture into the bottom of the prepared pan to form the crust.
- In a large bowl, beat the cream cheese until smooth and creamy. Add the sugar and vanilla extract, and continue to beat until well combined.
- Add the eggs one at a time, beating on low speed just until blended after each addition. Do not overmix.
- Stir in the sour cream and flour until just combined.
- Pour the cream cheese mixture over the crust in the springform pan.
- Place the pan inside a larger roasting pan and fill the roasting pan with hot water until it reaches halfway up the sides of the springform pan.
- Bake for 1 hour and 10 minutes, or until the center is almost set but still slightly jiggly.
- Turn off the oven, crack the oven door slightly, and let the cheesecake cool in the oven for 1 hour.
- Remove from the oven, cool to room temperature, and then refrigerate for at least 4 hours or overnight before serving.
