Description

Ingredients

Crust:

2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

Filling:

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

1/4 cup all-purpose flour


Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan and wrap the outside with aluminum foil to prevent water from leaking in during baking.
  2. In a medium bowl, mix the graham cracker crumbs with melted butter until well combined. Press the mixture into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat the cream cheese until smooth and creamy. Add the sugar and vanilla extract, and continue to beat until well combined.
  4. Add the eggs one at a time, beating on low speed just until blended after each addition. Do not overmix.
  5. Stir in the sour cream and flour until just combined.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Place the pan inside a larger roasting pan and fill the roasting pan with hot water until it reaches halfway up the sides of the springform pan.
  8. Bake for 1 hour and 10 minutes, or until the center is almost set but still slightly jiggly.
  9. Turn off the oven, crack the oven door slightly, and let the cheesecake cool in the oven for 1 hour.
  10. Remove from the oven, cool to room temperature, and then refrigerate for at least 4 hours or overnight before serving.
