Ingredients

1 cup butter, softened

1/2 cup powdered sugar, plus extra for dusting

1 teaspoon vanilla extract

2 cups all-purpose flour

1/4 teaspoon salt

1 cup chopped pecans

1/2 cup raspberry or apricot jam


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, powdered sugar, and vanilla extract until light and fluffy.
  3. Gradually add flour and salt, mixing well after each addition.
  4. Shape dough into 1-inch balls and roll each ball into a 3-inch rope.
  5. Twist each rope into a clothespin shape and place on the prepared baking sheet.
  6. Bake in the preheated oven for 12-15 minutes, or until lightly golden brown.
  7. Remove from the oven and immediately make an indentation in the center of each cookie with the handle of a wooden spoon.
  8. Cool cookies completely on wire racks.
  9. Once cooled, fill the center of each cookie with jam.
