Ingredients
1/2 cup coconut flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1/4 cup coconut oil, melted
1/4 cup maple syrup or honey
2 large eggs
1 teaspoon vanilla extract
Optional: 1/4 cup dark chocolate chips or shredded coconut
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together coconut flour, baking powder, and salt.
- In a separate bowl, mix melted coconut oil, maple syrup or honey, eggs, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. Fold in chocolate chips or shredded coconut if desired.
- Scoop tablespoon-sized portions onto the baking sheet and flatten slightly.
- Bake for 10–12 minutes until edges are lightly golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Adjust the sweetness by adding more maple syrup or honey to taste.
If the dough is crumbly, add a teaspoon of milk or water to moisten.
