Ingredients

1 cup uncooked jasmine rice

2 cups water

1 can (13.5 oz) coconut milk

1/2 cup unsweetened almond milk (or milk of choice)

1/3 cup maple syrup or honey (adjust to taste)

1 teaspoon pure vanilla extract

1/4 teaspoon salt

1/4 cup shredded unsweetened coconut (optional, for garnish)

Fresh fruits like mango or berries (optional, for serving)


Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rice and water. Bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer for 10–15 minutes until water is absorbed.
  3. Add coconut milk, almond milk, maple syrup, vanilla extract, and salt. Stir to combine.
  4. Bring the mixture to a gentle simmer over medium heat. Cook, stirring frequently, for 20–25 minutes until thick and creamy.
  5. Remove from heat and let cool slightly—it will thicken further as it cools.

Notes

Adjust sweetness to taste by adding more or less maple syrup or honey.

For a creamier texture, use short-grain rice or arborio rice.
