Ingredients
4 cod fillets (about 6 oz each)
Salt and pepper, to taste
2 tablespoons olive oil
2 cups cherry tomatoes, halved
3 cloves garlic, minced
1/4 cup unsalted butter, softened
2 tablespoons fresh basil, chopped
2 tablespoons fresh parsley, chopped
1 teaspoon lemon zest
1 tablespoon lemon juice
Fresh basil leaves, for garnish (optional)
Instructions
- Prepare the Cod:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Season cod fillets with salt and pepper on both sides.
- Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear cod fillets for 2-3 minutes on each side until golden brown. Transfer to the baking sheet.
- Prepare the Tomato and Herb Butter:
- In the same skillet, heat remaining olive oil over medium heat. Add cherry tomatoes and garlic. Cook for 3-4 minutes until tomatoes soften and release juices.
