Ingredients

4 cod fillets (about 6 oz each)

Salt and pepper, to taste

2 tablespoons olive oil

2 cups cherry tomatoes, halved

3 cloves garlic, minced

1/4 cup unsalted butter, softened

2 tablespoons fresh basil, chopped

2 tablespoons fresh parsley, chopped

1 teaspoon lemon zest

1 tablespoon lemon juice

Fresh basil leaves, for garnish (optional)


Instructions

  1. Prepare the Cod:
    • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • Season cod fillets with salt and pepper on both sides.
    • Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear cod fillets for 2-3 minutes on each side until golden brown. Transfer to the baking sheet.
  2. Prepare the Tomato and Herb Butter:
    • In the same skillet, heat remaining olive oil over medium heat. Add cherry tomatoes and garlic. Cook for 3-4 minutes until tomatoes soften and release juices.
    • Mix softened butter with basil, parsley, lemon zest, and lemon juice in a small bowl.
  3. Assemble and Bake:
    • Spoon tomato mixture over cod fillets. Dollop herb butter on top.
    • Bake for 10-12 minutes until cod flakes easily with a fork.
  4. Serve:
    • Garnish with fresh basil leaves if desired. Serve hot.

Notes

For dairy-free, use plant-based butter or coconut oil.

Substitute cod with other mild white fish like haddock or tilapia.
