Description

Indulge in these delightful Coffee Cake Cookies that combine the best of both worlds—soft, chewy cookies topped with buttery cinnamon streusel and a sweet drizzle of icing. Perfect for enjoying with your favorite cup of coffee or tea, these cookies are a wonderful snack or dessert option. Easy to make and incredibly satisfying, they’re a must-try for any cookie lover!

Ingredients

For the Cookies:

1 cup unsalted butter, softened

¾ cup granulated sugar

½ cup light brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

For the Streusel Topping:

1 cup all-purpose flour

½ cup light brown sugar, packed

1 teaspoon ground cinnamon

½ cup unsalted butter, melted

For the Icing:

1 cup powdered sugar

2 tablespoons milk

½ teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Prepare the Cookie Dough: In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy. Add the eggs one at a time and mix in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until just combined.
  3. Make the Streusel: In a medium bowl, mix together the flour, brown sugar, and cinnamon. Stir in the melted butter until the mixture resembles coarse crumbs.
  4. Form the Cookies: Scoop out 2 tablespoons of dough for each cookie and place them on the prepared baking sheets, about 2 inches apart. Press down slightly to flatten. Top each cookie with a generous amount of streusel, pressing it into the dough.
  5. Bake: Bake for 10-12 minutes, or until the edges are golden. Let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  6. Make the Icing: Whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over cooled cookies.
  7. Serve: Enjoy your cookies with a hot cup of coffee or tea!

Notes

Storage: Store cookies in an airtight container at room temperature for up to 5 days or refrigerate for up to 10 days. For longer storage, freeze them for up to 3 months.

Variations: Feel free to add chocolate chips or nuts to the cookie dough for extra flavor.
