Ingredients

½ cup light brown sugar, packed

2 large eggs

1 tsp vanilla extract

1 cup sour cream

For the Crumb Topping:

1 cup all-purpose flour

½ cup light brown sugar, packed

1 tsp ground cinnamon

¼ tsp salt

½ cup unsalted butter, melted

For the Glaze (optional):

1 cup powdered sugar

23 tbsp milk

½ tsp vanilla extract


Instructions

  1. Preheat Your Oven: Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. Make the Crumb Topping: In a medium bowl, mix together flour, brown sugar, cinnamon, and salt. Stir in melted butter until large crumbs form. Set aside.
  3. Prepare the Muffin Batter: In another bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, then stir in vanilla. Gradually add the flour mixture and sour cream until just combined.
  4. Assemble the Muffins: Spoon batter into muffin cups, filling them about two-thirds full. Top with crumb mixture, pressing it down lightly.
