Ingredients
For the Muffins:
2 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup unsalted butter, softened
½ cup granulated sugar
½ cup light brown sugar, packed
2 large eggs
1 tsp vanilla extract
1 cup sour cream
For the Crumb Topping:
1 cup all-purpose flour
½ cup light brown sugar, packed
1 tsp ground cinnamon
¼ tsp salt
½ cup unsalted butter, melted
For the Glaze (optional):
1 cup powdered sugar
2–3 tbsp milk
½ tsp vanilla extract
Instructions
- Preheat Your Oven: Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it well.
- Make the Crumb Topping: In a medium bowl, mix together flour, brown sugar, cinnamon, and salt. Stir in melted butter until large crumbs form. Set aside.
- Prepare the Muffin Batter: In another bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, then stir in vanilla. Gradually add the flour mixture and sour cream until just combined.
- Assemble the Muffins: Spoon batter into muffin cups, filling them about two-thirds full. Top with crumb mixture, pressing it down lightly.
- Bake the Muffins: Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.
- Optional Glaze: Whisk together powdered sugar, milk, and vanilla in a small bowl. Drizzle over cooled muffins before serving.
