Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

1 tablespoon instant coffee granules (adjust to taste)

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup semisweet chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
  3. Dissolve instant coffee granules in 1 tablespoon of hot water. Add dissolved coffee and vanilla extract to the butter-sugar mixture. Mix until well combined.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in chocolate chips if using.
  6. Drop rounded tablespoonfuls of dough onto prepared baking sheets, spacing them about 2 inches apart. Flatten each cookie slightly.
  7. Bake in preheated oven for 10-12 minutes, until edges are lightly golden. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
