1/2 cup cookie butter
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon (optional)
Instructions
- Preheat the Oven: Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream the Butter and Sugars: In a large bowl, cream together the softened butter, cookie butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
- Add Wet Ingredients: Beat in the egg and vanilla extract until smooth and well combined.
- Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using). Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Shape Cookies: Scoop the dough using a cookie scoop, roll into balls, and place them on the prepared baking sheets about 2 inches apart.
- Bake: Bake for 10-12 minutes, until the edges are set but the centers remain slightly soft. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Optional Spice: Adding cinnamon is optional but enhances the warm flavor of the cookies.
Storage: Store cookies in an airtight container for up to 5 days or freeze for up to 3 months.
Tip: For thicker cookies, chill the dough for 30 minutes before baking.
