Description

These moist and fluffy Cottage Cheese Pumpkin Spice Cake Bars are a protein-packed twist on a fall classic. Blended with cottage cheese and spiced with cinnamon, nutmeg, ginger, and cloves, they make a wholesome snack or light dessert.


Ingredients

1 cup pumpkin puree

1/2 cup cottage cheese

1/4 cup maple syrup or honey

1/4 cup coconut sugar or brown sugar

1 tsp vanilla extract

1 tbsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/4 tsp ground cloves

1/4 tsp salt

1 tsp baking powder

1/2 tsp baking soda

3/4 cup spelt flour or oat flour

2 tbsp almond flour (optional)

1/2 cup chopped walnuts or pecans (optional)

1/3 cup mini chocolate chips or raisins (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or grease it well.
  2. In a high-speed blender or food processor, blend the pumpkin puree, cottage cheese, maple syrup, coconut sugar, and vanilla extract until smooth.
  3. Transfer the mixture to a large mixing bowl and stir in the cinnamon, nutmeg, ginger, cloves, salt, baking powder, and baking soda until well combined.
  4. Fold in the spelt or oat flour and almond flour just until no dry spots remain.
  5. Gently mix in any optional add-ins like chopped nuts, raisins, or mini chocolate chips.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out mostly clean.
  8. Let the bars cool completely in the pan before slicing into squares.

Notes

Swap spelt flour with oat flour for a gluten-free version.

Almond flour can be omitted but adds a tender texture.

Add mini chocolate chips, raisins, or dried cranberries for extra flavor.

Top with pumpkin seeds or cinnamon sugar before baking for a decorative finish.

Use plant-based yogurt or blended tofu to make it vegan.
