1/3 cup light brown sugar
2 teaspoons ground cinnamon
2 apples, peeled and chopped
2/3 cup + 2 tablespoons granulated sugar
1/2 cup (1 stick) butter, softened
2 large eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup + 1 to 3 tablespoons milk or almond milk
1/2 cup powdered sugar
Instructions
- Preheat oven to 350°F. Prepare a 9-by-5-inch loaf pan with nonstick spray.
- Mix brown sugar and 1 teaspoon cinnamon in a bowl; set aside. Toss chopped apples with 2 tablespoons granulated sugar and remaining cinnamon.
- Beat butter and 2/3 cup granulated sugar until creamy. Add eggs one at a time, then vanilla extract.
- Whisk flour and baking powder, then add to butter mixture. Mix in 1/2 cup milk.
- Pour half the batter into the pan, add half the apple mixture, and sprinkle half the brown sugar/cinnamon mix.
- Repeat with remaining ingredients. Swirl brown sugar mix through apples.
- Bake for approximately 1 hour and 10 minutes.
- Mix powdered sugar with 1 to 3 tablespoons milk for glaze. Drizzle over cooled loaf.
