Ingredients
2 whole heads of garlic, peeled
1 tablespoon olive oil
1 onion, chopped
2 tablespoons butter
6 cups chicken or vegetable broth
2 sprigs fresh thyme
2 bay leaves
Salt and pepper, to taste
4 egg yolks
1/2 cup grated Parmesan cheese
Crusty bread, for serving
Fresh parsley (optional for garnish)
Instructions
- Heat olive oil and butter in a large pot over medium heat. Sauté the onion until softened, about 5 minutes.
- Add garlic cloves and cook for 2-3 minutes, stirring frequently.
- Pour in the broth, and add thyme and bay leaves. Bring to a boil, then simmer for 30 minutes.
- Remove thyme sprigs and bay leaves. Season with salt and pepper.
- In a small bowl, whisk together egg yolks and Parmesan cheese.
- Temper the egg mixture with a ladle of hot soup, then whisk the mixture back into the pot.
- Simmer for 5 more minutes, stirring continuously until the soup thickens.
- Serve hot with crusty bread and garnish with fresh parsley if desired.
Notes
For a vegetarian version, use vegetable broth instead of chicken broth.
To avoid curdling, temper the egg yolks by slowly whisking hot soup into the egg mixture before adding it back into the pot.
This soup can be frozen before the egg yolks are added, but avoid freezing after the egg mixture is incorporated.
