2 eggs, beaten

1 cup milk

Oil for frying

2 tablespoons reserved frying oil

2 tablespoons all-purpose flour

2 cups milk

Instructions

  1. Prepare the Chicken:

    • In another dish, whisk together eggs and 1 cup of milk.
    • Dredge each chicken breast first in the flour mixture, ensuring it’s evenly coated.
    • Dip the flour-coated chicken in the egg mixture, then dredge it again in the flour mixture for a double coating.
  2. Fry the Chicken:
    • Heat oil in a large skillet over medium-high heat.
    • Carefully place the coated chicken breasts into the hot oil.
    • Fry until golden brown and cooked through, approximately 4-5 minutes per side.
    • Once cooked, transfer the chicken to a paper towel-lined plate to drain excess oil.
  3. Make the Gravy:
    • Discard all but 2 tablespoons of the frying oil from the skillet.
    • Stir in 2 tablespoons of flour and cook for about 1 minute over medium heat to form a roux.
    • Gradually whisk in 2 cups of milk, ensuring there are no lumps.
    • Continue to cook and stir until the gravy thickens to a creamy consistency.
    • Season with salt and pepper to taste.
