Ingredients
3 lb beef roast (sirloin, chuck, or your preferred cut)
1 cup fresh cranberries (or 1/2 cup cranberry sauce)
1/2 cup balsamic vinegar
1/4 cup honey
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup beef broth
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, simmer cranberries, balsamic vinegar, honey, garlic, rosemary, salt, and pepper over medium heat until cranberries burst and sauce thickens slightly (5-7 minutes). Add beef broth and cook for 2-3 minutes. Remove from heat.
- Heat olive oil in an oven-safe skillet over medium-high heat. Season beef roast with salt and pepper, then sear on all sides until browned (4-5 minutes per side).
- Pour cranberry-balsamic sauce over the roast. Transfer skillet to the oven.
- Roast for 1.5 to 2 hours, basting with sauce every 30 minutes, until desired doneness (135°F for medium-rare, 145°F for medium).
- Let the roast rest for 10 minutes before slicing. Serve with cranberry-balsamic sauce.
