Ingredients

4 boneless, skinless chicken breasts

1 cup fresh or frozen cranberries

1/2 cup fresh orange juice

1 tablespoon orange zest

1/4 cup honey or maple syrup

2 tablespoons balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then sear in the skillet for 3-4 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, sauté minced garlic for 30 seconds until fragrant.
  4. Stir in cranberries, orange juice, orange zest, honey, balsamic vinegar, and thyme. Simmer for 5 minutes, allowing cranberries to burst and sauce to thicken.
  5. Return the chicken to the skillet, spoon some sauce over it, cover, and simmer for 10-12 minutes until chicken reaches 165°F (75°C).
  6. Let the chicken rest for a few minutes before serving with extra sauce drizzled on top.

Notes

For a tangier twist, swap honey for Dijon mustard.

Add toasted pecans or slivered almonds for crunch.

Ensure all ingredients are gluten-free if needed.

Frozen cranberries can be used if fresh ones aren’t available.
