Ingredients
2 cups rolled oats
1 cup dried cranberries
1/2 cup chopped pecans
1/2 cup honey or maple syrup
1/4 cup unsweetened applesauce
1/4 cup coconut oil, melted
Zest of 1 orange
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Pinch of sea salt
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, combine rolled oats, dried cranberries, chopped pecans, orange zest, ground cinnamon, and sea salt.
- In a separate bowl, whisk together honey (or maple syrup), applesauce, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients, mixing until fully combined.
- Press the mixture firmly into the prepared baking dish, spreading it evenly.
- Bake for 25-30 minutes, or until the edges are golden brown.
- Allow the bars to cool completely in the pan before slicing into 12 squares.
Notes
For a vegan option, use maple syrup instead of honey.
