Description

Ingredients

2 cups rolled oats

1 cup dried cranberries

1/2 cup chopped pecans

1/2 cup honey or maple syrup

1/4 cup unsweetened applesauce

1/4 cup coconut oil, melted

Zest of 1 orange

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

Pinch of sea salt


Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, combine rolled oats, dried cranberries, chopped pecans, orange zest, ground cinnamon, and sea salt.
  3. In a separate bowl, whisk together honey (or maple syrup), applesauce, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients, mixing until fully combined.
  5. Press the mixture firmly into the prepared baking dish, spreading it evenly.
  6. Bake for 25-30 minutes, or until the edges are golden brown.
  7. Allow the bars to cool completely in the pan before slicing into 12 squares.

Notes

For a vegan option, use maple syrup instead of honey.

Make these gluten-free by using certified gluten-free oats.
