This Crazy Good Casserole is a creamy, cheesy chicken and smoked turkey pasta bake that’s perfect for comforting family dinners. Packed with tender chicken, smoky turkey, and melted cheese, it’s an easy recipe for busy weeknights.


Ingredients

45 boneless, skinless chicken breasts

6 strips of smoked turkey, cooked and crumbled

2 cans cream of chicken soup

2 cups shredded Monterey Jack cheese

1 box (16 ounces) dried spiral pasta

1 tablespoon garlic powder

Salt and pepper to taste


Instructions

  1. Cook smoked turkey strips in a skillet until crispy. Crumble and set aside, reserving the drippings.
  2. Cut chicken into bite-sized pieces and cook in the reserved turkey drippings, seasoning with garlic powder, salt, and pepper.
  3. Prepare spiral pasta according to package directions. Drain and return to the pot.
  4. Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  5. Mix the cooked chicken, cream of chicken soup, and 1 cup of Monterey Jack cheese with the drained pasta until well combined.
  6. Pour the pasta mixture into the baking dish. Top with crumbled smoked turkey and remaining cheese.
  7. Bake for 20 minutes until the cheese is melted and golden. Serve hot.

Notes

You can substitute smoked turkey with bacon or ham.

For a healthier twist, use whole wheat pasta and reduced-fat cheese.
