Ingredients

Cake:

1/2 cup vegetable oil

1 cup granulated sugar

3 large eggs

8 oz cream cheese, softened

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1 tsp baking powder

1/4 tsp salt

Glaze (Optional):

1/4 cup powdered sugar

12 tbsp milk or cream


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a large bowl, beat the cream cheese until smooth. Gradually mix in the sugar.
  3. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, and salt. Slowly add the dry mixture to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool completely in the pan before removing the sides.
  7. (Optional) Prepare the glaze by whisking powdered sugar and milk/cream until smooth. Drizzle over the cooled cake.

Notes

For a zesty twist, add lemon or orange zest to the batter.

Chocolate chips or chopped nuts can be mixed into the batter for variety.
