Ingredients

1 sheet puff pastry

7 oz baby spinach

2 garlic cloves, minced

1 tbsp olive oil

8 oz cream cheese

½ cup shredded mozzarella cheese

1 egg

1 egg yolk (for brushing)

Pinch of salt

Pinch of black pepper


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. In a pan over medium heat, sauté minced garlic in olive oil for 2 minutes until softened.
  3. Add spinach to the pan, season with salt and pepper, and cook until wilted. Set aside to cool.
  4. Cut the puff pastry sheet into 6 or 12 squares and place them on the baking tray.
  5. In a bowl, combine the cooked spinach, cream cheese, mozzarella, and egg. Season with salt and pepper.
  6. Place a spoonful of the spinach mixture in the center of each square and fold the opposite edges together. Press firmly to seal.
  7. Brush the tops with egg yolk and bake for 25-35 minutes until golden brown.

Notes

Customization: Add crumbled feta, cooked bacon, or sun-dried tomatoes for extra flavor.

Freezing: You can freeze the unbaked puffs for up to 2 months. Bake them from frozen, adding a few extra minutes to the baking time.
