Ingredients
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 lb ground Italian sausage (or ground beef)
4 cups chicken broth
2 cups water
1 jar (15 oz) Alfredo sauce
1 can (14.5 oz) diced tomatoes, undrained
1/2 tsp Italian seasoning
Salt and pepper, to taste
8 lasagna noodles, broken into pieces
1 cup heavy cream
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil or parsley, chopped (for garnish)
Instructions
- Sauté the Onion and Garlic: Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened (3-4 minutes). Add garlic and cook for 1 more minute until fragrant.
- Cook the Sausage: Add ground Italian sausage (or beef) to the pot and cook, breaking it up as it cooks. Once browned and fully cooked, drain any excess fat.
- Add Broth and Seasonings: Pour in the chicken broth, water, Alfredo sauce, diced tomatoes, and Italian seasoning. Season with salt and pepper. Stir to combine and bring to a gentle boil.
- Add Lasagna Noodles: Add broken lasagna noodles and cook, stirring occasionally, for 10-12 minutes until noodles are tender.
- Add Cream and Cheese: Lower heat and stir in heavy cream, mozzarella, and Parmesan cheese. Stir until the soup is creamy and the cheese has melted.
- Serve: Ladle the soup into bowls and garnish with fresh basil or parsley. Serve hot with crusty bread.
Notes
Substitute the Meat: Ground turkey, chicken, or a plant-based alternative can be used instead of sausage for a lighter or vegetarian version.
Add Veggies: Consider adding spinach, zucchini, or bell peppers to boost the vegetable content.
Freezing Tip: The soup can be frozen for up to 3 months. However, the texture of the cream might change after freezing, so be sure to stir in extra broth or cream when reheating.
