Ingredients

1 tbsp olive oil

1 small onion, diced

3 cloves garlic, minced

1 lb ground Italian sausage (or ground beef)

4 cups chicken broth

2 cups water

1 jar (15 oz) Alfredo sauce

1 can (14.5 oz) diced tomatoes, undrained

1/2 tsp Italian seasoning

Salt and pepper, to taste

8 lasagna noodles, broken into pieces

1 cup heavy cream

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil or parsley, chopped (for garnish)


Instructions

  1. Sauté the Onion and Garlic: Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened (3-4 minutes). Add garlic and cook for 1 more minute until fragrant.
  2. Cook the Sausage: Add ground Italian sausage (or beef) to the pot and cook, breaking it up as it cooks. Once browned and fully cooked, drain any excess fat.
  3. Add Broth and Seasonings: Pour in the chicken broth, water, Alfredo sauce, diced tomatoes, and Italian seasoning. Season with salt and pepper. Stir to combine and bring to a gentle boil.
  4. Add Lasagna Noodles: Add broken lasagna noodles and cook, stirring occasionally, for 10-12 minutes until noodles are tender.
  5. Add Cream and Cheese: Lower heat and stir in heavy cream, mozzarella, and Parmesan cheese. Stir until the soup is creamy and the cheese has melted.
  6. Serve: Ladle the soup into bowls and garnish with fresh basil or parsley. Serve hot with crusty bread.
