A comforting and hearty casserole combining tender chicken, fresh spinach, and a creamy cheesy sauce for a satisfying, easy-to-make meal.
Ingredients
3 cups cooked chicken, shredded or chopped
4 cups fresh spinach, chopped
1 cup sour cream
1 cup cream cheese, softened
1/2 cup mayonnaise
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon dried Italian seasoning
Salt and pepper to taste
1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until soft and fragrant, about 3-4 minutes.
- Add chopped spinach and cook until wilted, about 2-3 minutes. Remove skillet from heat and let cool slightly.
- In a large mixing bowl, blend sour cream, cream cheese, mayonnaise, Italian seasoning, salt, and pepper until smooth.
- Fold in cooked chicken, sautéed spinach mixture, mozzarella, and half of the Parmesan cheese until well combined.
- Transfer the mixture to a greased baking dish and smooth the top. Sprinkle the remaining Parmesan evenly over the surface.
- Bake uncovered for 25-30 minutes until bubbly and golden. Let rest for 5 minutes before serving.
Notes
Can substitute mozzarella with sharp cheddar or Monterey Jack cheese.
Add sautéed mushrooms or chopped artichoke hearts for extra veggies.
For a crunchy topping, sprinkle crushed pork rinds or gluten-free breadcrumbs mixed with melted butter before baking.
Rotisserie chicken works well for convenience.
Store leftovers in an airtight container in the fridge for up to 4 days.
Reheat in oven at 350°F for 10–15 minutes or microwave covered in 1-minute intervals until hot.
