Description

A comforting and hearty casserole combining tender chicken, fresh spinach, and a creamy cheesy sauce for a satisfying, easy-to-make meal.


Ingredients

3 cups cooked chicken, shredded or chopped

4 cups fresh spinach, chopped

1 cup sour cream

1 cup cream cheese, softened

1/2 cup mayonnaise

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until soft and fragrant, about 3-4 minutes.
  3. Add chopped spinach and cook until wilted, about 2-3 minutes. Remove skillet from heat and let cool slightly.
  4. In a large mixing bowl, blend sour cream, cream cheese, mayonnaise, Italian seasoning, salt, and pepper until smooth.
  5. Fold in cooked chicken, sautéed spinach mixture, mozzarella, and half of the Parmesan cheese until well combined.
  6. Transfer the mixture to a greased baking dish and smooth the top. Sprinkle the remaining Parmesan evenly over the surface.
  7. Bake uncovered for 25-30 minutes until bubbly and golden. Let rest for 5 minutes before serving.

Notes

Can substitute mozzarella with sharp cheddar or Monterey Jack cheese.

Add sautéed mushrooms or chopped artichoke hearts for extra veggies.

For a crunchy topping, sprinkle crushed pork rinds or gluten-free breadcrumbs mixed with melted butter before baking.

Rotisserie chicken works well for convenience.

Store leftovers in an airtight container in the fridge for up to 4 days.

Reheat in oven at 350°F for 10–15 minutes or microwave covered in 1-minute intervals until hot.
