Ingredients

2 tablespoons olive oil

1 small onion, finely chopped

2 garlic cloves, minced

2 medium carrots, diced

2 celery stalks, diced

1/4 cup all-purpose flour

4 cups chicken broth

1 cup heavy cream

1 pound cooked chicken breast, shredded

1 pound potato gnocchi

2 cups fresh spinach, chopped

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and pepper, to taste

Parmesan cheese, for garnish (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5-7 minutes until softened.
  2. Sprinkle flour over the vegetables and stir well. Cook for 1-2 minutes to remove the raw flour taste.
  3. Gradually pour in chicken broth, whisking constantly to prevent lumps. Bring to a simmer.
  4. Stir in heavy cream, shredded chicken, thyme, basil, salt, and pepper. Simmer for 5 minutes.
  5. Add gnocchi and cook for 3-5 minutes until they float to the top.
  6. Stir in fresh spinach and let it wilt for 1-2 minutes. Adjust seasoning if needed.
  7. Serve warm, garnished with Parmesan cheese if desired.
